verystormy Posted June 29, 2014 Report Share Posted June 29, 2014 Well guys, I am cooking a lot at the moment with my spare time and done a lot of interesting dishes. But could do with some inspiration of great things to make. This week I have made Apple and berry pie Lemon drizzle cake Chicken and leek casserole Roast pork belly a stuffed squash (Hugh fearnley that if you haven't tried you must) And a range of others. I have a beef Wellington planned (fillet is on special in spud shed) But, am fast running out of ideas! Even thinking of doing the Julia movie thing and just getting classic book and doing them all. portlaunay Posted June 29, 2014 Report Share Posted June 29, 2014 Ha! I've just made Beef Wellington. If you haven't got it then invest in Jamie's Italy cookbook, I love just about everything in it. (Hunters Stew is awesome and I add Oxtail to it and freeze a ton of it for winter) Antonio Carluccio's Caponata is fantastic but it needs about three hours more cooking than he suggests as I like it stewed down and sticky. The kids have been watching Willy Wonka's this afternoon and it made me think about making some Scrumdidiliunctious chocolate (random fillings). I'd like to candy some lemon rind and meringue and make a lemon meringue pie chocolate bar but I also thought about some honeyed beetroot (blanched with aromatics then roasted in honey) and adding that to really bitter chocolate to see how it tastes (maybe game) My favourite herb is sage and I want to find a way to cure pork with a massive sage hit. Princi's do a stunning rolled pork with hazelnuts but IMO it needs a sage layer. On the subject of pork, what about pork with prunes? Yum-O! Easy and awesome dinner - lamb noisettes, pan fried with rosemary. Cook to rare, rest and deglaze the pan with brandy then hoof in some cream. It is probably the easiest and most fantastic thing ever. Chicken roast - Grab one of those oval Le Cruiset type casseroles. Add roots, put chicken on top, glass of wine, chicken stock half way up the bird, whatever herbage you like (but loads of), stick it on in the morning and let it gently cook away till dinner. Serve at the table with bread. I like to roast garlic for this, like about half a dozen bulbs in olive oil. Squidge them into a dish with the best olive oil you can find, add a bit of the gravy from your chicken and splodge it together then dip bread in. If you don't need to spend four hours in the foetal position after eating this because you've consumed too much you're doing it wrong. Actually the best way to eat it is to use two birds, start eating at lunch with friends, stay at the table with some great wine and all of a sudden it's 7pm and you've eaten everything! You've made me realise I think you and I should do a PP dinner. Let's cater for everyone, do a mammoth cook-off, charge a few bucks to cover costs and sit in the beautiful gardens of our church and watch people enveloped in warmth and satisfaction while the kids imagine fairies and sprites among the roses. I have also made a Thai green curry this week. In fact left overs are lunch today. Going to make a veg (left overs from yesterday) and feta pie.
