Laz
I make my own bread (in the bread maker) and I'm finding the result here isn't as good as it was in the UK. Ive only made white bread and I've tried Wallabys and Defiance flours....and Tandaco and Lowan yeast. Has anyone else noticed a difference or have any tips? The bread just doesn't seem right - today's bread seems a bit chewy...
verystormy
I don't use a bread maker - make by hand - but yes, I know what you mean. The flour is a bit more starchy. I know a lot of people buy flour improver from the supermarket

Rossmoyne
Try Leucke flour/bread mixes. I get mine from IGA and have been using them for a couple of years now and like them best of all others available. Defiance flour can be OK, but not consistently so I have found. lozzachino
Try bread improver, it definitely helps make it lighter

We buy our flour there and use our own breadmaker to turn it into bread
